Lore做的甜点的照片,我选了半小时都没能选出一张做头图。


因为每张都太好看了。


I can hardly choose one of the photos of Lore’s handmade dessert as the front cover, for all of them are so gorgeous.



我的朋友Lore, 巴塞罗那人,跟着做足球运动员的老公从巴塞罗那到美国,到上海,到澳洲,后来又回到中国,去了梅州。


My friend Lore, who is from Barcelona, moved from her hometown to America and then Shanghai, Australia and in the end went back to Meizhou in China with her husband, a football player.



四海为家,一技傍身:Lore的独门手艺是做素食甜品。我也算见多识广,但看过她的instagram之后,还是认真地吃了一惊。看看这个牛油果布朗尼(生):


Wherever Lore goes, the most precious skill she has is making desserts for vegetarians. I am quite picky about food but was greatly surprised when I saw her Instagram. Let’s see the Raw Avocado Brownies below.

后来我们认识了,见到Lore本尊,我惊艳again。她的脸比照片看上去小太多,不折不扣的“巴掌脸”。高鼻梁,超长睫毛,比你们种出来的睫毛浓密两倍。骨架是西方人的,头发却是东方人的黑。


Finally we met each other and I was greatly surprised by her small oval face, with a noble nose, long eyelashes, and Western frame topped with Eastern dark hair.



她的instagram帐号开了一年半,有了14万+粉丝,相当于微博的百万。


前几日我们在上海见面,喝咖啡,她说现在每天差不多要为ins工作3个小时左右。每条平均几千到上万个赞,评论数百条,她条条必看,尽可能回复。


Her Instagram attracted 140,000 followers in only a year and a halfwhich is about the same as having 3 million fans on Weibo!


She said that now she spends almost three hours on Instagram everyday. Each post has around several thousand thumbs-up and hundreds of comments. She reads every comment and tries her best to reply to each of them.



我刚刚开微博的时候,经纪公司的姑娘跟我说,做好新媒体没秘诀,回复每一条粉丝评论!我基本上就是做不到,瞬间对她仰望。btw我比她多了两个孩子,不过这也是借口。


When I just started on Weibo, the girls at the talent agency told me that it is necessary to reply each fan’s comment if you want to do well in the new-media industry. However, it is so hard for me, which makes me admire Lore even more.



Lore之前住在上海的时候,我俩约一起做菜。那天我做了中国菜——凉拌茄子、丝瓜炒毛豆、炒菌菇等;她给我做了甜品:巧克力奇亚籽布丁。


When Lore lived in Shanghai, I had the pleasure of cooking with her once. I cooked Chinese food, like eggplant in sauce, loofa with soybean sprout, and fried mushroom. She made me a lovely dessert, chocolate chia seed pudding.



她特别喜欢凉拌茄子的口感,回去后就做给她老公吃,也被夸得不行。她把这道菜拍了照,PO出来,我发现色泽比我做得还靓。食物只要出自她的手,就得既养口又养眼,不可缺一。


She loved the eggplant, so she made it for her husband that night and her husband also loved it! Then, she took a photo of it and posted it on Instagram. The color of her dish was more beautiful than mine because Lore’sfood is always both delicious and beautiful.



素食甜品师最需要两样东西:一台搅拌机,一个大厨房。年年奔走搬家,Lore带着设备,不累才怪呢。搅拌机就是她的半条性命。不过,经常换不同的生活环境,也时常能带来灵感。


Lore knows the importance of having the right equipment to make fabulous food. The most important thing for a vegan dessert chef is a blender and a big kitchen. It must be exhausting for Lore to carry her kitchen equipment with her wherever she moves each year. The blender equals to half of her life. However, frequently changing her living environment often brings inspiration.



找房子,拆箱,整理,安顿,住上一年半载后又打包装箱,搬家,重新找房子,拆箱……她说,如果不想两个人分开,你总需要放弃一些东西。


Looking for apartments, trying to put everything in order and then after staying for a year or so, there will a new circle of packing, moving, and clearing. She said that if a couple doesn’t want to be separated, they have to make sacrifices for some things.



会做还得会拍。美食照片都是她自己拍的。ins上她的简介写着:素食甜品师,食物摄影师。


Only being good at cooking is not enough, knowing how to take a good photo is also necessary. Lore takes all of the food photos herself. Her self-introduction on her Instagram is: Recipe Creator & Food Photographer.



技术并不是全部,唯有至爱才能创造至美。Lore的手指如有魔法一般,粉末,颗粒,整颗果子,到了她的手里都活了——因为领受了从指尖流溢的爱。


Skills are not everything, only with love can someone make a perfect masterpiece. Lore’s fingers are magical, they can bring powder, grain or the whole fruit to life, which is out of love.

Peanut Butter & Paspberry Cups

花生酱覆盆子杯



原料


花生酱陷料


腰果  3/4杯(浸泡至少6小时以上)

花生酱  1/3+1/4杯

生的中东芝麻酱(tahini)  1茶勺

杏仁奶  1/4杯

枫糖浆  1汤勺+1茶勺

盐  少许


覆盆子酱的原料:


新鲜覆盆子  1杯+1/2杯

生蜂蜜  1汤勺+2茶勺

柠檬汁  2茶勺

香草精  1/2茶勺

盐少许

奇亚籽  3汤勺+1茶勺


巧克力包裹原料:


生巧克力糊  1杯

可可黄油  1杯

枫糖浆  1/4杯

纯香草精  1茶勺

盐少许


做法:

1、把所有覆盆子酱的原料都搅拌在一起(除了奇亚籽),直到很顺滑。

2、加入奇亚籽并搅拌均匀,放进冰箱冷藏至少1个小时。

3、把花生酱馅料的所有原料放入搅拌机,直到柔滑。装进裱花袋,放进冰箱冷藏。

4、把巧克力黄油还有巧克力糊隔水融化,然后加入枫糖浆,盐还有香草精,用搅拌机搅拌直到食材全部混合在一起。

5、在纸衬片上把纸杯蛋糕托拍成一排,每个杯子里倒一汤勺的巧克力,放进冰箱,直到变硬成型。

6、把花生酱馅料放在中心,上面摆1-2茶勺覆盆子酱,然后在上面浇灌一些巧克力包裹.

7、撒一些盐,然后放进冰箱,至少需要1个小时。



素芝士



原料


基本食材:


生腰果  2杯 浸泡6小时

水  3汤勺

益生菌或乳酸菌 1个小胶囊


口味原料:


柠檬汁  2+1/2茶勺

营养酵母粉  2茶勺

喜马拉雅盐  1/2茶勺

黑胡椒  少许做顶饰


做法:

1、把泡好的生腰果洗净,并吸干水分。

2、把腰果加入搅拌机,并加入3汤勺的水,高速搅拌至十分顺滑,视情况看是否需要再多加一点点水。

3、变得非常浓稠之后,加入益生菌或乳酸菌,然后再搅拌几秒,不要搅拌过头。

4、把搅拌好的原料倒进芝士袋里,把两端扎紧,

5、让它发酵24-48小时,视奶酪酸的程度。如果你有食物风干机,设定在85F发酵。如果你没有,放在一个温水的盆里发酵,最好是上面盖一件衣服。

6、24-48小时后,打开芝士袋子看一看,闻一下是不是很芝士很奶油的味道?保证没有任何粉色的点点在上面。

7、把发酵好的芝士放在一个干净的碗里,表面会有一层稍硬的壳,如果你不喜欢可以去掉它,不过我自己通常喜欢保留。

8、加入口感调味料,可以按照自己的想法,挑出任何你喜欢的味道,你也可以加入一些新鲜香料等。

9、把加好调味料的芝士放在一个圆形塑料模型中,盖好盖子,放进冰箱。

10、最难的部分:为了达到一定的浓度,需要再次放进冰箱至少24小时。


上图的圆形芝士放在Lore的冰箱里放了一个月,最终出冰箱,做奶酪还是蛮考验人的耐心的。


btw:我在巴厘岛的时候,吃过一次素芝士,口感美到极致,至今难忘。
